Enrico Crippa and his personal journey to create an original Italian cuisine
Born in Brianza (Lombardy) in 1971, Enrico soon realized that cooking was his “vocation”.
As a child he used to spend summer in the countryside with his grandpa, who taught him how to figure out the fruits and vegetables were ripe yet.
One day during his childhood he promised his mother that one day he would receive the Michelin star.
Today he’s one of the most popular chef in the world.
Piazza Duomo Restaurant
All around the world the name of Enrico Crippa and his “Piazza Duomo” restaurant are synonym of culinary perfection and elegance.
Since its establishment in 2005, “Piazza Duomo” is the expression of the perfect combination between Piedmont excellent products and Enrico’s exquisite style, with Ceretto family as patron.
This unique restaurant has earned Three Michelin Stars since 2012. And now, it’s number 17 on the exclusive San Pellegrino list of the World’s 50 best Restaurants
Crippa's Idea of Salad
Early in the morning Enrico Crippa goes out to his garden to pick his own herbs and morning flowers. Weather permitting, of course: vegetables have to be fresh and crisp. If they’re soaked by the rain then they’re no good. This is why there is no “standard” composition for his salad, it’s different every day: the color and flavor have to be measured and balanced each time.
“I like to do things that no one else does. You can’t “buy” vegetables, you have to grow them yourself: pick them, clean them, prepare them and eat them within a few hours".
The Hazelnut Cake
Enrico Crippa’s culinary philosophy is based on an interpretation of the historical gastronomic heritage of Piedmont, with particular attention to the Langhe area. This region is famous for delicious hazelnuts of Tonda Gentile Trilobata variety, traditionally used to create gourmet sweets.
This P.G.I. (Protected Geographic Indication) fruit is considered to be the best hazelnut of the world, thanks to its smooth and round taste.
Once again Enrico worked his magic. Perfectly balanced between salty and sweet, and with a unique flavor, this cake is the pure expression of true Piedmont hazelnuts.
