Pumpkins and Amaretti Cookies Risotto
Porcini Mushrooms Risotto
Extra Virgin Olive Oil

Pour one or two tablespoon of Extra Virgin Olive Oil in a large pan. When it’s hot, add your favorite Risotto and toast it for a few minutes.
When the rice is well toasted, add gradually three glasses of lukewarm water and stir carefully from time to time.
It will take between 10 and 15 minutes - according to your taste - to cook the risotto. When it reach the desired consistency, remove from the heat and add a small knob of butter or a tablespoon of olive oil to make it creamier. You can also add some grated Parmesan cheese if you like it.
This Risotto is enough for 2/3 people. If more people will eat with you, do exactly the same with the other Risotto in a separate pan. Serve together at the center of the table so that everybody can enjoy both flavors and choose their favorite!
